Four years ago the world-wide meat snack industry was booming – be it described it in dollars, pounds or Korean won. Small craft jerky companies – specialising in imagination, quality and flavour – were spearheading this movement.
But a lot can happen in four-years. In the States, big snack companies have bought out the small and for most part, imagination, quality and flavour have gone out the window.
Here, Billy Franks was at the forefront of changing the UK’s perception of snack meat. Created by Will Yates – chief meat slicer, packer and bottle washer – Billy Franks was pushing the flavour envelop in a way never done before on our shores. When we talked to Will four years ago he looked tired. He still looks tired. In this episode, we re-visit Billy Franks and see what the costs are in keeping it real in the craft jerky industry.
