想介绍菜单给外国朋友，却不知道该怎么说？

broil/ roast/ grill/ bake/ toast 明明都是「烤」到底有什么差别？

烹饪动词和器具，另外加码描述食物形容词

今天一次都教给你！

首先，想考考大家知道「what’s cooking? 」是什么意思吗？其实有两种解释：

1. 你在煮什么？(What dish are you making?)

2. 发生什么事了？(What’s happening?)

1 . saute (v.) 炒；嫩煎

来自法语，是「to jump」意思，表示食物因为油、热的关系而跳动，或是厨师控制锅子手把，将食物均匀的摇晃晃动。后来在英文上是指平底锅上慢慢煎的动作，使用中温或大火将小块的食物拌炒直到外表呈现金黄色或煮熟。

Add the mutton and onion, and saute them for 3 minutes.

加入羊肉跟洋葱，拌炒三分钟。

2. pan- fry (v.) 煎

跟 saute 最大的差别就是火侯的不同，pan-fry 是指用低温慢慢将食物表面煎熟。

Firstly, melt the butter in a large frying pan and stir in the flour.

首先，在一个大型的平底煎锅里面将奶油溶开，并加入面粉搅拌。

3. stir-fry (v.) 快炒

炒饭 = stir-fried rice

炒菜 = stir-fried vegetable

炒面 = stir-fried noodle

Chinese people tend to use stir-fry or quick-fry method.

中国人倾向于使用旺火炒或者爆的方法。

4. deep-fry (v.) 油炸

油会覆盖过食物，高温将食物煮熟。

My favorite food in the United Kingdom is deep-fried fish.

在英国我最喜欢的食物就是炸鱼了。

5. poach(v.) 水煮

水煮蛋可是说 boiled eggs 或是 poached eggs。

To keep fit, I had poached egg for breakfast every day.

我们每天早上都会吃水煮蛋。

6. broil/ roast/ grill 烤

这三个单词都是「烤」的意思，但都有些微的不同。

热从上面来叫 broil ; 热从四面八方来叫 roast ; grill 则是放在条状的烤架上烤。

Fish should be broiled for at least for 10 minutes.

鱼至少要烤十分钟。

Before you roast the turkey in the oven, baste it in oil.

在把火鸡放在烤箱烤之前，先涂上一层油。

My mom taught me how to grill tasty chicken breast.

我妈妈教我如何做出好吃的烤鸡胸肉。

7. bake 烘培

通常一提到 bake，都会连想到糕点类的东西，像是蛋糕、饼干、甜点等。

She baked bread in an oven.

她用烤炉烤面包。

8. stir (v.) 搅拌

Stir the mixture until smooth.

搅拌这种混合物直到调匀为止。

9. whisk 打（蛋）

Whisk egg whites until they’re just foamy.

把蛋打到直到他们呈现泡沫状。

10. flip (v.) 翻面

I flipped the egg over in the pan.

我把平底锅裡的蛋翻过来。
