Keto Noodles (Konjac Root)

2 ½ cups cool water

1 ½ - 2 Tbsp Glucomannan powder

In a medium bowl add water and glucomannan powder and whisk together

Let sit for 15 minutes, then do the “trench” test – the mixture should close the gap slowly.

Place in the microwave and warm to above room temperature.

Add the pickling lime and water mixture to the gel.

½ tsp pickling lime

1 Tbsp water

Mix until gel becomes firm then spoon into a plastic pasta press, lower the end of the pasta press into boiling water. Press approx. 6 inches into the water and cut with a knife stirring after each cut. Boil for 5 minutes.

Drain and dry fry in an ungreased pan and reduce to 50% volume.

Add sauce and the noodles will absorb the sauce.

Add any other ingredients and enjoy!
