Did you know that antimicrobial resistance isn't just about antibiotics? AMR refers to genetic mutations in all kinds of microbes (bacteria, fungi, viruses, etc) that allow them to survive the effects of an antimicrobial (antibiotics, antifungal, fungicide, biocide, disinfectant, etc.) that should kill them. So yeah, AMR is everywhere.
In this week's episode we're chatting with Jovana Kovacevic, from Oregon State University, she tells us a little about why she's so invested in addressing AMR within food processing systems and we get to drill down a little bit on sanitizers, their uses, and levels of "resistance" to these essential compounds. All that and more in this episode of Tales of the Resistance.
